back to school fashion, for the littles.

The other day I received a phone call from my niece asking to be on my blog.  Of course,  I said yes, and asked her what we should talk about.  We decided to do a “back to school fashion” post.  The pictures were sent to me via a cell phone, so I’m sorry the quality isn’t the best.  But, as you can see I have a very fashionable little niece, who is going to be completely styled when she goes back to school in a few weeks.  Thanks, doll.  Now,  come see your auntie in Cali!

Greek Festival


I Hope everyone had a wonderful weekend!   The Greek festival was going on in Santa Barbara this past weekend, so that’s what we did.  We had so much fun!  The food was amazing, and we ate till we couldn’t fit another piece in us.  The Greek House Cafe, provided most of the food, and it was scrumptious.  They also had an array of desserts.  Of course we didn’t pass those up either.

This was our first time to the festival, and we had a nice time.  We will for sure go back next year.  Santa Barbara is well known for their festivals, which are fun and gives you something to do outside almost every weekend.  Next weekend is Fiesta, which is a big, huge PARTY!

Here are some pictures of the amazing food and fun dancing we got to watch.  Of course, Dave wanted to dance, and I didn’t. That sounds about right. Ha!

pizza night

It’s not often that we carb-load around here, but we sure did the other day.  We made homemade pizza, well kind of.  I bought one of those pre-made doughs at Trader Joe’s, and we put our own toppings on top.  So easy and so good!  I like making our own pizza, that way we can add as much as we like or as little as we like.  We are meat lovers over here, so we used lots of different Italian meats.  This night we used salami, prosciutto, and capicola, and fresh mozzarella for the cheese.  It was yummy!

Hope you all have a wonderful weekend.  And yes, I know all of my posts were about food this week.  We like to eat around here.  Ha!

I had high hopes of going to the beach this weekend.  The sun didn’t want to come out until later in the day, when I already was in the mood to do something else.  So, I decided to bake a cake, and I wanted to try something different, other than your ordinary cake.  I found this recipe here.  I have to say, we really enjoyed it.  It wasn’t too sweet, yet you could still taste a mild sweetness.

For some reason I felt it was somewhat healthy too, but probably not.  I maybe thought that because there wasn’t any frosting on it.  Ha!

Olive oil cake with bittersweet chocolate and rosmary

3/4 cup spelt flour

1 1/2 cups all-purpose flour

3/4 cup sugar

1 1/2 teaspoons baking powder

3/4 teaspoon kosher salt

3 eggs

1 cup olive oil (I used half olive oil and half walnut oil)

3/4 cup whole milk

1 1/2 tablespoons fresh rosemary, finely chopped

5 ounces bittersweet chocolate, chopped into 1/2-inch pieces

Preheat oven to 350 degrees.  Rub a 9 1/2 inch pan with olive oil.

Whisk the dry ingredients into a large bowl and set aside.

In another large bowl, whisk the eggs thoroughly.  Add the olive oil, milk, and rosemary and whisk again.  Using a spatula, fold the wet ingredients into the dry, gently mixing just until combined.  Stir in the chocolate.  Pour the batter into the pan, spreading it evenly and smoothing the top.

Bake for about 40 minutes, or until the top is golden brown, and a toothpick in the center comes out clean.  The cake can be eaten warm or cool.

sushi date


Sorry it’s been a little quiet around here.  We have been extra busy with life.  Ha!  Usually we have a pretty good balance, but lately it has been going full speed, with not a second to pause.  It’s funny how when it rains it pours, and pours, and pours.  That’s ok, we are up for the challenge.  Anyways on another note, I finally got to have a Friday night, date night with my hubby.  After weeks, even months of him working long hours, and two jobs, we got to spend a Friday night together.  It was pure bliss.  We went out for sushi, which is our absolute favorite, and then went for an hour foot rub.  Oh geez, those foot spas, they are amazing.  We both happen to be on our feet ALL of the time, so we thoroughly enjoy them.  Try one, you won’t be disappointed.

I hope everyone had a lovely weekend. I hopped on a plane down to Florida, for one day. You heard me, one day. I had a little business to take care, which went overwhelmingly well.
I enjoyed my one whole day there, the weather seemed tolerable, I thought it was going to be unbearably humid. It wasn’t that humid, to me, but remember I’m originally from Omaha, Nebraska. I think the whole trip was made mainly because of the hosts that had me into their home. They are originally from Omaha, which is our connection. I have to be honest, in hopes that I don’t offend anyone, but Midwesterners have to be the most down to earth, kind, sincere, loving people around. I miss the Midwest everyday, but I am grateful to live where I do because I sure do love the ocean.
Anyway here are a few snapshots of Florida…
