Hello!

I hope everyone had a great weekend! We did a lot of r&r around here. I have been doing a high intensity workout since April, and I have to say it’s been challenging, but good.  I have been fortunate or not fortunate, however you want to look at it, to not have to work out my whole life, until now.  I’m 39, and let’s just say my body doesn’t just drop weight like it use to.

All of that being said, I have recently started counting my macros. This has worked really well for me. Remember, everyone’s body is different, what works for one person may not work for another. This is what I needed. My personality is the type that one isn’t enough and ten isn’t enough either, so I wanted to find a balance. This also keeps me accountable, which is what I need.

I’m always searching for the best products for myself. Easy meals, on the go snacks, etc…When I came across Square Organics they sounded like the perfect snack bar. All organic and super clean ingredients, just what I like. I don’t have one favorite flavor, they are all amazing! The whole family actually liked them, even Eleanor. Big Sur/San Francisco Trip

Helloooo!!

I know it’s been forever since I have been in this space. Feels good to be back posting, even if it’s just for a minute. I have been so busy with Love Threads, that I have abandoned this space a little bit. Opps!

We decided last month that we needed a little getaway. We usually go to Sayulita, Mexico around this time, but we decided, with how busy the store was, we better stay somewhat close, and make it a quick trip.

We drove to Big Sur for a few nights, and stayed at Glen Oaks.  I highly recommend it.  Everyone was super nice and the rooms were very clean and comfortable.  We had the most amazing food while we were in Big Sur. Everything we ate seemed so fresh and healthy. We had brunch at Deetjen’s, lunch at Nepenthe , and dinner at Big Sur River Inn, which was perfect with Eleanor. On another day, we visited the most amazing bakery, Big Sur Bakery. So so tasty!! We also did the iconic hike to McWay Falls. Absolutely breathtaking! Big Sur is a sleepy town, with what felt like a lot of good, mellow energy. Exactly what we needed.

We drove up the coast to San Francisco next, and pretty much ate our way through the city. San Francisco is one of my favorite cities, but, I did noticed this time that it was a little more difficult with Eleanor. Now I know why people in NYC, and other big cities are always at the parks. Eleanor isn’t use to being in the car so much, but overall she did well. We did fall upon this amazing park, Dolores Park. We let her run and play for a good couple of hours, to get out some much needed energy.

I had to hit up the famous Mr. Holmes Bakehouse, for their cruffin. They make 150 a day, you’re only allowed two per person, and they go fast! I stood in line, while Dave sat in the car with Eleanor, and I hit the jackpot! Made the cut-off, barely. Totally worth the wait, do it!!!

I hope to be back in this space more, it’s just hard with being a mommy and running a business. Regardless, I will always pop back to share anything fun and exciting!!

Turmeric Breakfast Muffins

The other day I was cruising through Instagram, while nursing, and found this amazing recipe, that I had to share.  I’m always looking for that perfect, healthy, muffin recipe. Here is what I have come to understand, about 1 in every 5 healthy recipes, that I try, turn out to be keepers. So, after trying this one, we all agreed it was a good one!

I found it on the amazing IG account, @gkstories. If you’d like different alternatives for some of the ingredients, he does list them on his site.

Here is the recipe I followed…

Turmeric & Blueberry Breakfast Muffins with a Granola Topping
Makes 12 large or 15 smaller

This makes a rather large batch for our small family, so we usually freeze half of them.

Dry ingredients
100 g / 1 cup walnuts
85 g /1 cup rolled oats, use gluten free if intolerant
90 g / 2/3 cup buckwheat flour + 2 tbsp arrowroot (or potato starch)
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tbsp turmeric (use a little less if you are not used to the flavor)
1 tsp freshly ground cardamom
½ tsp sea salt
a pinch black pepper

Wet ingredients
160 ml / 2/3 cup buttermilk or plant yogurt
80 ml / 1/3 cup olive oil or butter
2 ripe bananas, mashed
5 fresh dates, mashed
3 large eggs (or 3 tbsp chia seeds mixed with 9 tbsp water)

A large handful blueberries, frozen or fresh

Granola topping
1/3 cup rolled oats
2 tbsp olive oil/coconut oil
1 tbsp runny honey

Preheat the oven to 400°F / 200°C. Line a muffin pan with paper liners or grease the pan with oil or butter. Add walnuts and rolled oats to a food processor or blender (or mortle) and mix quickly into a coarse flour. Transfer to a large mixing bowl together with the rest of the dry ingredients. Add buttermilk, oil, bananas and dates to the food processor or blender and mix until smooth, then transfer to the mixing bowl with the dry ingredients. Crack the eggs in a separate bowl and beat them for about a minute before adding them as well. Use a spatula to carefully fold everything until combined. Divide the batter into the muffin tins, drop a bunch of blueberries on top of each muffin and gently push them down a bit. Mix together the granola crumble in a small bowl and add it on top of the muffins. Bake for about 18-20 minutes. Best enjoyed still warm from the oven.

Holiday Baking

The baking continues over in our household. I came across this amazing vegan sugar cookie recipe (yes, it’s amazing), and wanted to share it with you.

I hope everyone is enjoying this season as much as I am. Having a little one, really makes it that much more special.

Also, I made a promise to myself, that I am hitting the gym after the holidays. UGH! I have never liked the gym, like not even a little bit. Send some good gym juju my way, please. Ha!

On that note, here is the amazing vegan sugar recipe…

Ingredients

  • 1 1/2 cups powdered sugar
  • 1/8 teaspoon salt
  • 1 cup soft but not melted coconut oil
  • 1/4 cup unsweetened coconut milk, soymilk, or almond milk
  • 1 teaspoon vanilla
  • 2 1/2 cups unbleached all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 2 cups powdered sugar
  • 2 tablespoons coconut, soy, or almond milk
  • sprinkles or sanding sugar (optional)

Instructions

  1. In a large bowl, beat 1 1/2 cups powdered sugar, 1/8 teaspoon salt, coconut oil, 1/4 cup coconut milk, and 1 teaspoon vanilla with an electric mixer on medium speed to combine. Stir in flour, cornstarch, baking soda and cream of tartar until blended. If dough is too crumbly, add a little more milk until it comes together. Cover and refrigerate at least 2 hours.
  2. Preheat oven to 375 degrees F. Line a cookie sheet with parchment paper or lightly grease with cooking spray. Divide dough in half. Roll each dough half to 1/4 inch thickness on a floured surface cut out with cookie cutters. Dough may need to warm up a little before it’s easy to roll out. Place shapes on the cookie sheet 2 inches apart and bake 7-8 minutes until edges just begin to turn golden brown. Cool on a wire rack.
  3. To make icing, place powdered sugar and milk in a small bowl. Whisk until smooth. Spread on cooled cookies or use a piping bag to make designs. Use sprinkles or sanding sugar to decorate. adapted from Betty Crocker

Yield: 12 cookies depending on size 
Prep Time: 10 mins. Cook time: 8 mins.
Total time: 18 mins.

Terra’s Kitchen // home delivery

Hello Fresh

We are huge fans of cooking at home! Dave and I both love to cook.  We also love to cook together, although, lets be honest, he usually ends up doing the cooking and I’ll do the clean up. Regardless, we do eat at home a lot.  We like to go out occasionally, but, we would much prefer to stay home.  The one thing we do struggle with sometimes (I’m using struggle very loosely), is what to make. We tend to go on repeat with the same things.

Health // urban remedy

Up next for our favorite go-to snacks is, Urban Remedy. Urban Remedy, is a line of raw, ready to eat snacks, meals, cold pressed juices, and other tinctures.  We tried many of their snacks, and enjoyed them all.  We favorited the no oatmeal cookies, the sour cream and chive kale chips, and the banana brittle. They are a great snack to keep around for noshing on.  I’m such a snacker, so I need to have healthy food around, or I will eat anything, even if it’s not good for me.

Urban Remedy also has a great cleanse, for resetting your health, and treating different ailments. Please use caution with your body when doing any cleanse.  I plan on doing a cleanse when I’m done nursing Eleanor.  It’s probably safe to do one now, but I’m choosing to wait.  So, that probably won’t be happening for a while, because Eleanor is still nursing full time, and I’m totally fine with that.  I always feel like a good juice cleanse is great for cleaning and restarting your body.

It’s so funny how snacking has completely changed for me.  Yes, I’ll admit, I use to run to Taco Bell, eat Doritos, or grab a candy bar.  But, as I’ve gotten older and definitely since I’ve had Eleanor, my snacking choices have changed so much, along with many other choices.  It’s crazy how a little human will give you the feeling that you want to live FOREVER! I mean don’t get me wrong, I wanted to live before, but this little girl takes it to a whole new level.

perfect bar newContinuing on with sharing more nutritious snacks.  The next company we have teamed up with is Perfect Bar.  I first tried perfect bar a while back.  I actually came across someone on Instagram, who was eating them.  I’m not going to lie, she looked darn good, and this was one of her “meal” items that she swore by.  So, I was on it.  I had a hard time finding them at first, because I was looking on the store shelves by all of the other bars. But, because they are completely preservative free, without any artificial ingredients and emulsifiers, they were located in the refrigerated section. YES! even better.

I have tried all of the Perfect Bars.  They are all equally delicious.  Usually, with bars, I find one or two in the group that I really like, and leave the rest behind.  Not the case with Perfect Bar. The bars are so fresh, and are very filling. Great supplement for a small meal, at least for me.  Dave loves the Perfect Bars too.  We both feel great after we eat one.  Just knowing that there are no preservatives in them, that they are GMO free, filled with 20+ superfoods AND gluten free, REALLY does make all of the difference.

If you live in Santa Barbara, you can find them at Whole Foods, Lazy Acres, and occasionally I will find them at Costco. Remember: Always in the refrigerated section. Our family stands behind this company 100%. Nothing but good stuff fills the Perfect Bar!
