Big Sur/San Francisco Trip

Helloooo!!

I know it’s been forever since I have been in this space. Feels good to be back posting, even if it’s just for a minute. I have been so busy with Love Threads, that I have abandoned this space a little bit. Opps!

We decided last month that we needed a little getaway. We usually go to Sayulita, Mexico around this time, but we decided, with how busy the store was, we better stay somewhat close, and make it a quick trip.

We drove to Big Sur for a few nights, and stayed at Glen Oaks.  I highly recommend it.  Everyone was super nice and the rooms were very clean and comfortable.  We had the most amazing food while we were in Big Sur. Everything we ate seemed so fresh and healthy. We had brunch at Deetjen’s, lunch at Nepenthe , and dinner at Big Sur River Inn, which was perfect with Eleanor. On another day, we visited the most amazing bakery, Big Sur Bakery. So so tasty!! We also did the iconic hike to McWay Falls. Absolutely breathtaking! Big Sur is a sleepy town, with what felt like a lot of good, mellow energy. Exactly what we needed.

We drove up the coast to San Francisco next, and pretty much ate our way through the city. San Francisco is one of my favorite cities, but, I did noticed this time that it was a little more difficult with Eleanor. Now I know why people in NYC, and other big cities are always at the parks. Eleanor isn’t use to being in the car so much, but overall she did well. We did fall upon this amazing park, Dolores Park. We let her run and play for a good couple of hours, to get out some much needed energy.

I had to hit up the famous Mr. Holmes Bakehouse, for their cruffin. They make 150 a day, you’re only allowed two per person, and they go fast! I stood in line, while Dave sat in the car with Eleanor, and I hit the jackpot! Made the cut-off, barely. Totally worth the wait, do it!!!

I hope to be back in this space more, it’s just hard with being a mommy and running a business. Regardless, I will always pop back to share anything fun and exciting!!

Turmeric Breakfast Muffins

The other day I was cruising through Instagram, while nursing, and found this amazing recipe, that I had to share.  I’m always looking for that perfect, healthy, muffin recipe. Here is what I have come to understand, about 1 in every 5 healthy recipes, that I try, turn out to be keepers. So, after trying this one, we all agreed it was a good one!

I found it on the amazing IG account, @gkstories. If you’d like different alternatives for some of the ingredients, he does list them on his site.

Here is the recipe I followed…

Turmeric & Blueberry Breakfast Muffins with a Granola Topping
Makes 12 large or 15 smaller

This makes a rather large batch for our small family, so we usually freeze half of them.

Dry ingredients
100 g / 1 cup walnuts
85 g /1 cup rolled oats, use gluten free if intolerant
90 g / 2/3 cup buckwheat flour + 2 tbsp arrowroot (or potato starch)
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tbsp turmeric (use a little less if you are not used to the flavor)
1 tsp freshly ground cardamom
½ tsp sea salt
a pinch black pepper

Wet ingredients
160 ml / 2/3 cup buttermilk or plant yogurt
80 ml / 1/3 cup olive oil or butter
2 ripe bananas, mashed
5 fresh dates, mashed
3 large eggs (or 3 tbsp chia seeds mixed with 9 tbsp water)

A large handful blueberries, frozen or fresh

Granola topping
1/3 cup rolled oats
2 tbsp olive oil/coconut oil
1 tbsp runny honey

Preheat the oven to 400°F / 200°C. Line a muffin pan with paper liners or grease the pan with oil or butter. Add walnuts and rolled oats to a food processor or blender (or mortle) and mix quickly into a coarse flour. Transfer to a large mixing bowl together with the rest of the dry ingredients. Add buttermilk, oil, bananas and dates to the food processor or blender and mix until smooth, then transfer to the mixing bowl with the dry ingredients. Crack the eggs in a separate bowl and beat them for about a minute before adding them as well. Use a spatula to carefully fold everything until combined. Divide the batter into the muffin tins, drop a bunch of blueberries on top of each muffin and gently push them down a bit. Mix together the granola crumble in a small bowl and add it on top of the muffins. Bake for about 18-20 minutes. Best enjoyed still warm from the oven.

Celebrating Summer in winter

Sorry about the absence around here lately. We hope everyone is having a great February!

We have been enjoying this 80 degree weather we are having! What??!! It’s been pretty much summer around here, and we are not complaining. Although, I will admit, I loved the cooler, rainy weather we had, for all of 2 weeks. The midwest girl in me itches for cooler days.

Eleanor has been enjoying her sandbox, and playing at the beach and different parks. She’s definitely a sun child. Just like her daddy.

I’ve been trying to slow down a little bit with work during the days, to enjoy my time with Eleanor. She’s growing up so fast, and it’s starting to hit me hard.  I don’t want to miss out on her discoveries because my head was shoved in a computer. I’m sure you can all understand that.

Below are a few pics from our latest days spent together. Eleanor really is the most amazing gift I have ever received. Some days I want to rip my hair out (like we all have), but even on those days, I’m super grateful that I was given this beautiful soul.

Favorite calendars of 2016

Call me crazy, but for some reason this year, I have multiple calendars around our home. I guess I need them. Maybe, I just really like the aesthetics of them. Anyway, I found some good ones and wanted to share them with you, before it’s too late.

We do use multiple calendars to help us stay organized for home, work and social activities. It helps us with keeping some sort of structure in our home.  Plus, it’s nice to see all of the pretty pictures.

Christmas 2015

Christmas was so special this year. Eleanor was at the age, that she kind of knew what was going on. We began by reading her a few Christmas stories, leading up to Christmas, and cheated a bit, and gave her presents to open the week leading up to.  She loved all of the bows and wrapping. We probably could have just wrapped wrapping, and we would have been good. It’s so fun to watch those little eyes light up at everything, and watch those little hands pull at all of the bows.

Now, it’s time to get back to all of the healthy eating, and staying on track. My body wasn’t feeling so hot after putting stuff in it that I normally don’t eat. Of course, at the time it seems like an awesome idea, but I paid for it later.

I hope everyone had an amazing holiday season!

The baking continues over in our household. I came across this amazing vegan sugar cookie recipe (yes, it’s amazing), and wanted to share it with you.

I hope everyone is enjoying this season as much as I am. Having a little one, really makes it that much more special.

Also, I made a promise to myself, that I am hitting the gym after the holidays. UGH! I have never liked the gym, like not even a little bit. Send some good gym juju my way, please. Ha!

On that note, here is the amazing vegan sugar recipe…

Ingredients

  • 1 1/2 cups powdered sugar
  • 1/8 teaspoon salt
  • 1 cup soft but not melted coconut oil
  • 1/4 cup unsweetened coconut milk, soymilk, or almond milk
  • 1 teaspoon vanilla
  • 2 1/2 cups unbleached all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 2 cups powdered sugar
  • 2 tablespoons coconut, soy, or almond milk
  • sprinkles or sanding sugar (optional)

Instructions

  1. In a large bowl, beat 1 1/2 cups powdered sugar, 1/8 teaspoon salt, coconut oil, 1/4 cup coconut milk, and 1 teaspoon vanilla with an electric mixer on medium speed to combine. Stir in flour, cornstarch, baking soda and cream of tartar until blended. If dough is too crumbly, add a little more milk until it comes together. Cover and refrigerate at least 2 hours.
  2. Preheat oven to 375 degrees F. Line a cookie sheet with parchment paper or lightly grease with cooking spray. Divide dough in half. Roll each dough half to 1/4 inch thickness on a floured surface cut out with cookie cutters. Dough may need to warm up a little before it’s easy to roll out. Place shapes on the cookie sheet 2 inches apart and bake 7-8 minutes until edges just begin to turn golden brown. Cool on a wire rack.
  3. To make icing, place powdered sugar and milk in a small bowl. Whisk until smooth. Spread on cooled cookies or use a piping bag to make designs. Use sprinkles or sanding sugar to decorate. adapted from Betty Crocker

Yield: 12 cookies depending on size 
Prep Time: 10 mins. Cook time: 8 mins.
Total time: 18 mins.

Family Photos

A few weeks ago we did the yearly family photo session. That’s always a fun thing to get ready for. (insert sarcasm)

Eleanor and I had had a few photos taken a week prior. I always seem to need a photo of myself, or Eleanor, for work. So, we snapped a few on a friends property. It was easy, probably took ten minutes, Eleanor was all smiles, and it went smoothly. For our family photos, different story.  Eleanor had just woke up from a nap, and we thought she had enough time to warm up, but instead, she wanted nothing to do with any photo. Ha! We did our best, and managed to get a few anyway.

Now, off to make those holiday cards.  They may not make Christmas, but, I promise, everyone will have a New Year’s card from us.

We chose to use Tiny Prints this year for our holiday cards. They are super helpful, and we love that a ‘professional’ always looks them over, to make sure they come out perfect.

Gingerbread cookies + essential oils

We have finally been getting into the groove of Christmas around here. I know, it’s not even Thanksgiving yet, but we like to start early. Who doesn’t?!

We’ve been trying to engage Eleanor in the kitchen a little more.  She loves the refrigerator, and she loves to get out all of the pots and pans, but, we’re trying to engage her in the cooking aspect of it all. She’s still a little young, but it’s the thought that counts, right?

The other morning I had a huge craving for gingerbread cookies, and of course, if you know me, you know that they had to be healthy. I remember a while back looking on the internet and coming across a somewhat healthy, and a very easy recipe, via My New Roots.

Here is the recipe I followed…

Healthy Holiday Gingerbread
Makes at least 2 dozen medium-sized cookies

Ingredients:
2 ½ / 350g whole spelt flour
¼ tsp. fine grain sea salt
½ tsp. baking powder
1 Tbsp. ground ginger (or less if you prefer more mild gingerbread)
1 ½ teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon freshly grated nutmeg
5 Tbsp. coconut oil, melted
½ cup / 70g coconut sugar
½ cup / 125ml unsulfured blackstrap molasses
3 Tbsp. unsweetened applesauce
1 tsp. vanilla extract

Directions:
1. Sift the dry ingredients together.
2. In a small saucepan, melt the coconut oil, then whisk in the molasses, applesauce, and vanilla.
3. Pour the wet ingredients over the dry, and fold to combine – you may need to use your hands to mix this, but don’t overwork the dough. Fold just until the ingredients come together evenly. Turn dough out onto a piece of plastic wrap, make a ball, then flatten into a large disc. Wrap and place in the fridge for at least 1 hour.
4. Preheat oven to 350°F / 175°C. Remove dough from the fridge, unwrap and cut in half. Wrap one half and return it to the fridge. Place the other half of the dough between two pieces of baking paper and roll out (if it is very stiff, you may need to let it warm up just slightly). Remove top half of the paper and cut out desired shapes with a cookie cutter or a knife. Slide a knife or thin egg lifter under each shape and place on a lined baking sheet. Ball up the scraps of dough, roll it out between the parchment and start again. Once the dough becomes too warm, return it to the fridge and repeat the entire process with the other half of the chilled dough.
5. Place cookie sheet in the oven and bake for 7-10 minutes (7 minutes produces a softer, chewier cookie, while 10 minutes produces a crispier one). Remove from oven and let cool on pan.

For the frosting, that I drizzled lightly across each cookie, I used a recipe adapted from here.  I really wanted to incorporate essential oil some way. We used orange for this recipe, and it was divine!

Dream Bedding

To continue on with our design décor series, we have found the dreamiest of dreamy bedding. Cariloha,

I’ve spent countless dollars on good bedding, because I firmly believe in, if you spend a little extra money you can have a quality product.  Not all of the time, but sometimes. Cariloha, is my new favorite brand. Their product is amazing.  The sheets and duvet both washed up nicely, and both are extremely soft.

On a side note, Cariloha has amazing customer service. The gentleman I dealt with couldn’t have been any kinder, and in today’s world, kindest to me means everything.
