Every morning I struggle to gobble anything down, except coffee of course.  I know from reading enough health magazines that breakfast is the most important meal of the day.  So, I have turned to bananas.  They are easy, fast and yummy…Oh and super good for you.

Bananas contain Vitamin C, B6, potassium and dietary fiber.  They do not contain fat or cholesterol.  Bananas are very low in sodium, 2.3mg.  The Vitamin C which is found moderately in bananas, assists in defending against and healing infections.  The Vitamin B6 found helps strengthen our immune systems and aids in the development of red blood cells and central nervous system function.  Potassium, a large part of a banana, is a mineral that works in the building of muscle tissue and the synthesis of protein.  Potassium is an electrolyte which stimulates nerve electrical impulses for muscle contraction.  It helps reduce hypertension and stroke.
Bananas contain 3 natural sugars, sucrose, fructose and glucose along with fiber.  Instant boost of energy.

There you have it, instant gratification of nutrients.  Below is a healthy banana bread recipe.

Banana Quick Bread

2 c. whole wheat flour
11/2 tsp. baking powder
1/2 teas. baking soda
1/2 teas. salt
1/4 tsp. ground cinnamon
1/2 c. packed brown sugar
2 lg. egg whites
1 lg. egg
11/2 c. mashed ripe bananas
1/3 c. low-fat buttermilk
3 tbsp. vegetable oil

Preheat oven to 350F.  Lightly coat 9″ by 5″ loaf pan with nonstick spray.
In medium bowl, whisk flour, baking powder, baking soda, salt and cinnamon.
In large bowl, with mixer on medium-high speed, beat sugar, egg whites, and egg until almost doubled in volume.  On medium speed, beat in bananas, buttermilk, and oil until well combined.
With rubber spatula, gently fold in flour mixture until just combined. 
Pour batter into prepared pan, smoothing top.  Bake 1 hour or until toothpick inserted in center comes out clean.
Let cool in pan for 10 min. Remove from pan and let cool completely.

    Potassium is helpful with legs cramps – eat those bananas!
