Brussel Up On Your Sprouts

I remember a few years back my dad and I had this bonding moment over a certain food, brussels sprouts.  We talked about our love for them, how great they are for you and on and on.  My mother was in the other room making gagging noises.  Today we have converted her 100%.  Thank GOD!  The health benefits from these little green balls are amazing. 
Brussels Sprouts are rich in protein, dietary fiber, vitamins, minerals and antioxidants, which work wonders to get rid of many health problems.  Brussels are an excellent source of vitamin A, C and E.  A serving of these savory sprouts supplies nearly a day’s worth of vitamin C.

Roasted Brussels Sprouts & Red Onions
with Balsamic Vinegar
11/2 lb brussels sprouts, trimmed and quartered
1 Tbsp olive oil
11/2 lb red onions, thickly sliced
1/4 c balsamic vinegar

Heat oven to 450. Line large baking sheet with nonstick foil. 
Spread brussels sprouts in single layer on prepared pan and toss with oil. Roast in oven, stirring occasionally, 12 minutes.
Add onions to pan, tossing to combine, and roast until vegetables are tender and golden brown, about 10 min longer. Drizzle with vinegar, tossing to combine, and roast 2 min longer.
Transfer to serving bowl and season with salt and pepper.
