A Valentine’s Day To Remember

I had the most amazing Valentine’s day. My husband, who always has something up his sleeve, pulled off a good one. We went to eat at one of my favorite restaurants, Opal. We had a lovely dinner, and then came time for the dessert. I see the waitress walking over with a candle on the dessert, and asked “Why does she have a candle on the dessert”, Dave said “I don’t know”. She arrived at the table with a plate that said “Happy Valentine’s Day” in chocolate with a box sitting along with it, that had a Canon EOS Rebel T3 in it. Oh My! I sure was surprised. The funny thing about this, was that on our way to dinner, I told my husband that I didn’t really need to have that camera that I’ve been obsessing about for a while. Ha!

What a fun night. I only wish I was as good as my husband with gift giving. He always goes to the extreme. No complaints here.

The Best Pancake You Will Ever Have!

   I must share with you the most amazing pancake that I have ever had. It is so easy to make. Some refer to it as a Dutch pancake or a puff pancake. You will never want a regular pancake again. If I didn’t have to worry about gaining weight I’d eat this more than I’d admit, for sure.

Here is what you’ll need:

2 eggs

1/2 cup milk

1/2 cup flour

dash of salt

dash of cinnamon

1 tbsp butter

Preheat oven to 425.

Whisk together the eggs, milk, flour, salt and cinnamon in a bowl.

While oven is preheating, melt the butter in a pie pan or a 9 inch square pan.

Pour the batter into the hot melted butter pan.

Bake 10-12 minutes or until pancake is firm and puffed around the edges.

Serve with powdered sugar, maple syrup and/or fruit.

I Like Red…

  Lately it’s been all about the color red for me.  Maybe It’s because of the time of year, maybe I just like red, or perhaps I may actually look ok in the color.  First, I have been looking for the perfect red lipstick, and I think I found one here.  Then I moved on to this classic red dress, that I can dress up or wear a simple little flat.  And considering we’ve gotten a bit more popular this year (haha, joking), I found the “perfect” holiday party dress, here.  So, here is my little salute to red.
