This weeks addictive eating pattern seems to be around kale. We are loving kale in this household. I know, I know, yuck, it’s bitter, I don’t know how to make it, it taste weird. I’ve heard it all. I was actually one of those people, until I finally perfected the perfect dressing. I like to make a kale salad adding a few artichoke hearts and a little feta, and mixing in the dressing till it has coated the kale. This is key when making a kale salad. You have to make sure it is completely coated, otherwise you will have that bitter taste.

Now, for the wonderful benefits around kale:
High in fiber, calcium, vitamin A, C and K
Filled with powerful antioxidants
Great for cardiovascular support
One of the best detox foods.

Here is what I use for my dressing:

1/4 cup of olive oil, depending on how big your salad is.

1 or 2 squeezes of mustard, doesn’t matter which kind.

1 whole, fresh squeezed lemon.

mix together and done!
