I recently found a really easy, healthy salad from one of my favorite bloggers, Bleubird. I have actually made something very similar to this, only with quinoa. What is great about this recipe is that you can make a big batch ahead of time, and store it in a glass container, in the refrigerator, for the work week. If you’re anything like us, we take our lunches to work. It’s much healthier.
Here are the ingredients you will need:
1 bag of farro (Trader Joe’s has the perfect 10 minute cook)
Cook farro for 10 minutes, drain and set aside. Chop all of your veggies and almonds into small pieces, you may add or exclude any veggie or nut that you want. In a large mixing bowl, mix your veggies, nuts and farro together. In a separate bowl mix the olive oil and balsamic together, using as much as you want, depending on your liking. Then pour over salad, and mix. I also threw some feta on top at the end, but you don’t have to.
ps. I also just learned from the same post, that laying a spoon over a pot of boiling water, keeps it from overflowing. Genius!
