A birthday celebration

We had a special birthday celebration for my best friend this last weekend, my husband.  We celebrated all weekend long, in between all of his work.  We went to the beach for some surfing, breakfast, dinners, and even a homemade cake!  If you couldn’t tell, we like to eat.  I hope you all had a wonderful weekend.

summer salad

The other day while surfing the net, I came across a yummy, healthy looking salad.  Considering we REALLY enjoy salads around here, I thought I’d give it a try.  I love nothing more than an ice cold, summer salad.  I found this one on this lovely blog.  I made it pretty much the same, but you may want to go straight to the source.  Here is what I used:

2 zucchini

2 yellow squash

1 large shallot

sea salt

fresh lemon juice

white wine vinegar

olive oil

Italian seasonings

fresh Italian parsley

arugula

avocado

walnuts

First, I sliced the zucchini and squash VERY thin.  I put them in a colander and sprinkled them with coarse sea salt, and let them sit for a half hour.  While those were sitting, I sliced up the shallots, very thin.  I put the shallots in a bowl and covered them with vinegar, to soak.  I let them soak for about 10 minutes, then added the olive oil to the shallots. (I used a good amount of olive oil).  Then, I toasted the walnuts over the stove, on low heat and set them aside to cool.  Then, I rinsed the zucchini and squash off, and patted dry.  I put them in a large bowl and mixed in the shallot mixture and tossed in the roasted walnuts.  At the very end, slice up your avocado and I chopped up my arugula (you can just throw it in), mix everything and add a bit more sea salt and fresh squeezed lemon.  That’s it!

currently noshing…

Healthy is where it’s at these days.  I’m loving all of the fruit, starting to be “in season”.  I went on a bit of a naughty snacking phase, but I’m back to the healthy eating.  I feel so much better when I eat the stuff my body really wants in it.  I love honeydew and watermelon, I could eat them all day long, everyday.  Both seem to satisfy that sweet tooth that I tend to get at night.  If I cut the fruit up and put it in a container in the refrigerator, I’m more likely to go grab that instead of running to the local (around the corner), snack shack for ice cream.  So here is to a healthy summer!

PS: I found this on one of my favorite blogs, and yes I’m going to treat myself to it this weekend.

summer selections

Here are a few of my favorite things, that I am eyeing for the summer.  Something for the beach, something to read, and something to eat.  I’m buying the book and making the salad pronto!  I’m saving my pennies to buy something from Ace and Jig.  If you’ve never looked at their gorgeous pieces, check them out.  You’ll find something you will want.  I promise.

currently noshing…

Nothing has been healthy this week.  Our eating schedule is way off, our work schedule is crazy, and our sleep is close to nonexistent.  So, that being said, currently noshing this week is not going to look good, unless that is, you like junk food.  I mean who doesn’t like a little unhealthiness sometimes.  You only live once, don’t beat yourself up.  Ever since I had my miscarriage I have struggled with not being 110, but I have also come to the realization that being 35, almost 36, I’m not going to spend the rest of my life stressing about weight and trying to do the newest fad diet.  Not worth it in my book.  I’m pretty good, most of the time, so that will do.  On that note…here is this weeks currently noshing.

Weekend Shenanigans

Hope everyone had a wonderful weekend!  We were busy, good busy.  The mister was working all weekend, but I was playing.  the weather was gorgeous.  I got to celebrate a friend’s birthday, attend a tea and crumpet gathering,  a fabulous dinner at this place, and go to the beach.

This was my first time going to a tea and crumpet party.  Crumpets, which are a mix between a pancake and an english muffin, are pretty darn good.  If you’d like to try them, you can purchase already made ones, at trader Joe’s.  They’re pretty much a carb overload, but, who doesn’t love that!  I was also part of a very special celebration this weekend, for a very special lady.  So proud of you, Stephanie.  Then Sunday rolled around, and it was time to hit the beach for a little r&r.  So we gathered some folks together and made a fun day out of it.  Thanks, friends.

I feel so grateful to be surrounded by such amazing people, today.  Who knew life could be this good!

Currently Noshing…

weekend food 008

 This week we are indulging in, fresh, farmers market strawberries.  Yum!  We like to support the local farmers as much as we can.  We also try to eat almost everything organic.  This is not always the case, but we try.  Also, I just purchased It’s All Good
by Gwyneth Paltrow, and I love it!  The recipes are simple, yet a bit unique.  She also discusses the elimination diet, and shows by each recipe, if it is vegan, elimination or protein-packed.  Worth the buy especially if you’re up for a little change, to a healthier lifestyle.

Hope everyone is having a great week.

We are at Disneyland!  Off we go, to get ready to enter the happiest place on earth.

Taco Night

The other night a few of us girls got together for a little supper club.  Well, it actually was our first supper club together, but we talked about doing it once a month because it was so fun!  Our friend, Katie, hosted.  She was wonderful, and an excellent cook.  It’s nice to get together with the girls every once in a while.  I love my husband, and love spending time with him, but it’s good to have girl time.  Katie made tacos, and all of the wonderful fixings to go along.  It was delish!

I almost forgot…Katie had us all try the dessert pictured below.  It was vanilla ice cream, with aged balsamic dressing, and a tiny bit of sea salt.  Oh my! It was amazing.
